The John Lynch

Every showman has a Lynch pin. Chi Chi had his, his name was John.

 

For thirty-some years on tour, while Chi Chi Rodriguez danced the sword dance on the eighteenth green, John Lynch read the lie, called the club, and read the lie again. The bag was the work. The performance was the bag. They had different jobs and one job. That bag man was that man.

 

This is a drink built like that partnership. Cold brew up top, lemonade underneath, doing the harder thing without asking for it.

 

It's like an Arnold Palmer (ice tea and lemonade), but with coffee.

RECIPE

 

Single serving • tall highball

 

120g Like Summer cold brew, chilled
90g Fresh lemon juice (≈ 3 lemons)
30g simple syrup
90g cold filtered water
Garnish w/ lemon wheel and/or thyme sprig

 

BUILD

  1. Fill a tall glass with ice.
  2. Add lemon juice, simple syrup, and cold water. Stir briefly to combine. OR pre-make some lemonade so you've got it on hand. Stay ready as they say.
  3. Pour the cold brew slowly on top so it cascades and stratifies. Do not stir, yet.
  4. Pinch a lemon wheel onto the rim and/or lay a thyme sprig across the rim.
  5. Look at it. That's shit's pretty huh?
  6. Stir and sip.

 

NOTES

  • The 3:1 fresh juice to simple syrup gives a punchy lemonade that holds its own against the coffee. Don't over dilute your lemonade or you'll end up with a weak glass.
  • This recipe is a perfect excuse to keep a bottle of fresh lemonade on hand all summer.
