This is foam architecture — egg white whipped tight, demerara doing the work that simple syrup can't, lemony vermouth cutting through the cold brew so it lands as bright as anything you'd build with whiskey.
A few coffee beans as garnish. Or perfect it with Angostura on top that finishes the sentence if you're good with the slightest proof: three drops, feathered with a toothpick, a small piece of bar craft that takes one camera-side practice run.

RECIPE
Single serving · shaken · coupe
3oz Like Summer cold brew
.75oz Abstinence Alcohol-Free Lemon Aperitivo (or something like it)
.75oz demerara syrup
1 fresh egg white (≈ .5oz)
2 dashes Angostura bitters (in the shake)
3 dots Angostura bitters (on the foam, feathered)
BUILD
- Combine cold brew, aperitivo, simple syrup, egg white, and the two dashes of Angostura in a shaker tin. No ice yet.
- Dry shake hard for 15 seconds. This whips the egg white into a tight foam.
- Add ice. Wet shake for 10 more seconds.
- Double strain into a chilled coupe.
- Wait 30 seconds for the foam to fully set on the surface.
- Place three small Angostura dots in a line across the foam. Drag a toothpick through them in one smooth motion to feather.
NOTES
- Angostura at 2 dashes is industry-standard for N/A cocktails — alcohol content is negligible. For true 0.0%, swap to All The Bitter aromatic.
- Crack the egg fresh. Separate over a clean second bowl so a broken yolk doesn't ruin the whole build.
- The dry shake first is non-negotiable. Ice in the first shake kills the foam.
- For a vegan swap, use ½ oz aquafaba (the liquid from a can of chickpeas) in place of the egg white. Same dry-shake method.
