The Black Russian

The Dude drinks a white Russian. So we thought we’d build one that Frank Lucas might order.

 

House coffee liqueur first — cognac cold-steeped overnight with coarse Like Summer, then sweetened with demerara. Pour it over ice. Stir in some more cold brew on top. Finish it with a little 3:2:1 orange cold foam and orange zest floated over the surface so the first sip is citrus oil, the second is coffee on coffee, and the rest is the cognac doing what cognac does in cool rooms, when the weather’s warm.

 

Sophisticated. Not serious about it.

RECIPE

 

Single serving • layered with cold foam • rocks glass

 

2oz Like Summer cold brew

2oz house coffee liqueur (see prep below)

≈1oz orange cold foam (see prep below)

1 large clear ice cube

— orange zest to garnish  

 

BUILD

  1. Drop the large cube in a rocks glass.
  2. Pour the liqueur. Pour the cold brew on top. Stir a lil’ to mix
  3. Spoon or pour the cold foam gently over the surface so it sits as a distinct half-inch layer.
  4. Zest some orange rind on top of the cold foam.

 

NOTES

  • PREP — House coffee liqueur (T-2 days): 300g cognac (VS / VSOP) + 35g coarse-ground Like Summer, cold-steep 18–24 hr. Filter through a coffee filter, do not squeeze. Stir in 120g demerara syrup. Gets you ~345g finished, ≈5–6 drinks.
  • PREP — Orange cold foam: 60g half and half + 60g whole milk + zest of ½ orange + 15g simple syrup. Use a milk frother to mix and froth to soft peaks. — stiffer and it sits like meringue, looser and it sinks.
