When I was young and had to go down south to visit Grandma Jean, she would wake me at dawn. Take me out to the fields and show me how to prime the crop. “The bottom leaves are always ready first,” she’d say, ripping one free. Then she’d use it as a fan to shoo the mosquitoes and the musk away.

Bloom 45g @ 0:00 — Pour 45g in a slow, controlled spiral from center outward to saturate all grounds evenly. Allow to bloom for 45 seconds — naturals off-gas significantly and a full bloom prevents channeling in the flat-bed.

Pour 120g @ 0:45 —
Pour steadily in slow concentric circles, keeping the water level consistent and avoiding the filter walls. Aim to reach 120g total by 1:15. Gentle agitation here helps even extraction across the flat Kalita bed.

Pour 210g @ 1:30 — Once the bed drops slightly but before it fully drains, begin a second steady pour to 210g total by 2:00. Maintain a medium-low pour height to minimize turbulence and preserve the soft, creamy body.

Pour 300g @ 2:15 — Final pour to 300g total, completed by 2:30. Pour slowly and centrally to avoid disturbing the bed edges. Allow to fully drain — drawdown should complete between 3:00 and 3:30. If draining faster, nudge grind finer by half a step.
