Bloom 50g @ 0:00 — Pour 50g in a slow, tight spiral starting from center outward. Ensure all grounds are saturated. Allow to bloom for 45 seconds — the flat Kalita bed promotes even CO2 degassing across the entire puck.

Pour 100g @ 0:45 —
Pour steadily to 100g total using gentle concentric circles, avoiding the filter walls. Maintain a low pour height (3-4cm) to minimize agitation and preserve delicate floral aromatics. Target reaching 100g by 1:15..

Pour 200g @ 1:30 — Continue with controlled circular pours to 200g total. Keep the slurry level consistent — the Kalita's flat bed and three small holes naturally regulate flow, so resist the urge to stir. Target reaching 200g by 2:00.

Pour 300g @ 2:15 — Final pour to 300g total, finishing with a slow center pour to gently consolidate the bed. Allow full drawdown. The flat bed should drain evenly — an uneven bed suggests grind distribution needs attention next brew.

Notes

  • This Yirgacheffe Abaya is exceptionally expressive — resist the temptation to agitate or stir during the brew. The Kalita Wave's flat bed does the work for you, and unnecessary turbulence will muddy the floral clarity that defines this coffee.
  • Allow the brewed coffee to cool slightly before your first sip — at 97°C brew temp, the most complex aromatic layers (bergamot, jasmine, white wine) reveal themselves more fully around 55-60°C in the cup. Patience is rewarded here.
